1/2 brown sugar
1 1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 3/4 cups mashed cooked pumpkin
1 cup soymilk or rice milk, or almond milk

Directions
Whip eggs until frothy
Beat in sugar, then spices and salt
Add pumpkin and milk and beat until well blended and smooth
Pour mixture into pie shell
Bake at 450F for 10 minutes

Homemade Pie Crust
Ingredients
2 cups all-purpose flour, sifted
1 teaspoon salt
1/2 cup butter or 2/3 cup shortening
5-7 tablespoons cold water
Directions
Put flour into mixing bowl with the butter
Using a pastry cutter, cut the butter into the flour
Add salt and water
Mix dough until is formed
Roll out on flat surface
Bate and 375 F until brown
Prick crust prior to baking for non filled baked pies
