Sweet Potato Hash

Ingredients
1 lb ground meat, browned
3 large sweet potato, peeled and diced into ½-inch cubes
3 tbsp olive oil divided
2 tbsp margarine
1 ½ yellow onion, diced [optional]
16 oz kale or spinach, chopped
16 oz crimini brown mushrooms
3/4 tsp sea salt, or to taste
3/4 tsp black pepper, or to taste
Instructions
1. Prepare the sweet potato: Preheat oven 425°F. Peel and cube sweet potatoes into 1/2-inch pieces. Place sweet potatos on baking sheet. drizzle with 1 Tablespoon olive oil. bake for 30 minutes flipping every 10 minutes.
2. Brown Meat.
3. Sauté aromatics: In a large skillet, melt the coconut or olive oil over medium heat. 5-7 minutes. [1 pound mushrooms + 2T olive oil]
4. Stir in greens. Add the kale or spinach to the skillet and cook until it has wilted, about 2–3 minutes.
5. Combine sweet potatoes, meat, mushrooms & olives. Season with salt and pepper.
