Swedish Meatballs

Swedish Meatballs
Servings: 6 

INGREDIENTS  
16 oz meatballs (use meatball recipe)
1 cup fresh mushrooms, sliced
12 oz cooked gluten free pasta or 3 cups cooked rice

Swedish Meatball Sauce
1 cup vegetable broth or water
1 (14 ounce) can coconut milk or other non-dairy milk
2 tablespoons coconut aminos
1 teaspoon Maille dijon mustard
1 tablespoon cornstarch

DIRECTIONS
1. Sauté mushrooms in pan with oil. Set aside.
2. Mix all ingredients (except the cornstarch) in a skillet or saucepan, then bring to a boil. Reduce heat to a simmer and whisk in cornstarch. Let simmer for a few minutes, stirring constantly, until the gravy is thick and creamy.
To thin the sauce out, add dairy-free milk or water a tablespoon at a time until desired consistency is reached.
3. Combine mushrooms, sauce and meatballs.
4. Serve over pasta or rice.
