Ingredients
6 cups broccoli florets chopped (about 2 crowns)
2/3 cup red onion, finely chopped (about 1 small onion)
8 slices nitrate free bacon sugar free for Whole30 cooked
1/2 cup dried cranberries
1/3 cup roasted sunflower seed kernels
Dressing:
3/4 cup homemade mayo or store bought paleo mayo*
1 Tbsp fresh lemon juice
1/2 tsp onion powder
1/2 tsp garlic powder
1 teaspoon dried chives.
1/2 teaspoon dried parsley
1/4 tsp black pepper
Sea salt to taste
Instructions
1. In a large bowl, combine the broccoli, onion, cooked and crumbled bacon, raisins and sunflower seeds. In a separate medium bowl, whisk together the dressing ingredients.
2. Toss the dressing with the broccoli mixture, cover and refrigerate for 15 minutes-1 hour before serving. This allows the dressing to settle into the broccoli for the best flavor. You can also dress the salad up to 8 hours before serving, keeping it covered in the refrigerator. Enjoy!
