Street Taco Baja Fish - McCormick®

 

MCCORMICK® STREET TACO BAJA FISH 



TOTAL TIME: 20 minutes
SERVINGS: Makes 5 (2 tacos) servings

YOU WILL NEED
1 pkg. McCormick® Seasoning Mix [see recipe substitution below]
4 tilapia fillets or any white fish fillets (about 1 lb.)
2 tbsp. vegetable oil
10 (6-inch) corn tortillas, warmed

DIRECTIONS
1. Coat fish evenly on both sides with Seasoning Mix.
2. Heat oil in large nonstick skillet on medium heat. Add fish; cook 3 to 5 minutes per side or until golden brown and fish flakes easily with a fork.
3. Cut fish into 10 portions. Serve in tortillas with desired toppings.


BOWL
1. Mix Seasoning. Toss with Fish. Cook Fish. [as described below]
2. Combine Fish, Avocado, Tomatoes, Red Onions, Shredded Cabbage, Cauliflower Rice

Copycat Baja Fish Taco Seasoning Mix

Makes about 1 packet equivalent (for ~1 lb fish)

Ingredients
1 tsp garlic powder
1 tsp chili powder
3/4 tsp ground cumin
1/2 tsp black pepper
1/2 tsp dried oregano
1 tsp kosher salt
1 tsp sugar
1 tsp fine cornmeal
1/2 tsp citric acid (or substitute extra lime zest + a squeeze of lime juice when cooking)
1 tbsp finely crushed dried red bell pepper (or 1 tsp paprika + 1 tsp dehydrated bell pepper if you have it)
1 tsp dried lime peel or lime zest
1/4 tsp lime juice powder (optional but helps mimic the packet)
Tiny pinch lime oil or extra lime zest (optional)

To Use

Toss with:
1 lb white fish (cod, mahi mahi, tilapia, halibut, etc.)
1 tbsp oil
Juice of 1 lime
Let sit 10–20 minutes.

Cook:
Skillet: medium-high heat, 3–4 min per side
Air fryer: 400°F for 8–10 min
Oven: 425°F for 10–12 min
