Sweet Potato Hash

Sweet Potato Hash Yields: 6 servings Prep time: 15 minutes Cook time: 20–25 minutes Ingredients 1 lb ground meat, browned 3 large sweet potato, peeled and diced into ½-inch cubes 3 tbsp olive oil divided 2 tbsp margarine 1 ½ yellow onion, diced [optional] 16 oz kale or spinach, chopped 16 oz crimini brown mushrooms 3/4 tsp sea salt, or to taste 3/4 tsp black pepper, or to taste Instructions 1. Prepare the sweet potato: Preheat oven 425°F. Peel and cube sweet potatoes into 1/2-inch pieces. Place sweet potatos on baking sheet. drizzle with 1 Tablespoon olive oil. bake for 30 minutes flipping every 10 minutes. 2. Brown Meat. 3. Sauté aromatics: In a large skillet, melt the coconut or olive oil over medium heat. 5-7 minutes. [1 pound mushrooms + 2T olive oil] 4. Stir in greens. Preheat oven to 400 degrees. Line a baking sheet with foil then place a cooling rack on top and spray very well with nonstick spray. Set aside. 2. Bring water to a boil in a small saucepan then add rinsed quinoa, cover with a lid, turn heat down to medium-low, and then cook until quinoa is tender, about 10 minutes. Fluff with a fork then cool slightly. 3. In a large bowl combine cooled quinoa and applesauce. Stir to combine then add beef and mix to combine using hands. Form 24 meatballs. Place on prepared cooling rack then bake for 15-17 minutes, or until no longer pink in the center.
